Curried Sausages


20mls light olive oil

1kg good quality beef sausages

250gms onion quartered and then sliced thinly along the length

20gms finely diced garlic

250gms small carrots peeled and sliced

12gms madras style curry powder

500mls hot water

2 teasp massel chicken stock powder

125gms fruit chutney

125gms light sour cream

350gmss chopped ripe fresh tomatoes

80gms spinach

Herbed yoghurt to serve

Naan bread to serve OR

300gms brown rice cooks to 600gms cooked rice

10gms chopped parsley


  1. Boil sausages in a saucepan with water and bring to the boil
  2. Boil 10 mins to cook through
  3. Remove from saucepan, drain and cool
  4. Heat oil in a saucepan
  5. Saute onion, carrots and garlic for 5 mins till onion and carrot is soft
  6. Add curry powder. Cook 1minute stirring
  7. Blend in stock, and chutney and cook for 20mins
  8. Add chopped tomato and cook for 5mins
  9. Add cream and bring to the boil
  10. Fold in fresh baby spinach
  11. Slice sausages on an angle
  12. Makes 6 serves x 200gms
  13. Makes 8 serves
  14. Serve with naan bread or brown rice and a dollop of herbed yoghurt
