Mushroom Sauce

Ingredients

1 tablesp oil

500gms kg onions finely diced

750gms mushrooms slicedgarlic

50gms finely diced

500gms bacon diced

½ teasp black pepper

1/2 cup parsley finely chopped

1 tablesp chopped thyme or picked leaves

1/2 cup shallots finely sliced

250gms light philly cream cheese

300 mls cream (use milk if you want to keep fat content down)

1 cup spinach leaves

Taste before adding salt

 

Method

  1. Heat 1 tablesp olive oil in a large saucepan
  2. Cook onions and garlic with bacon in a greased pan till onions are soft
  3. Add mushrooms and cook till soft
  4. Add shallots with pepper
  5. Add cream cheese and cook slowly till it melts
  6.  Fold in sufficient cream or milk required to achieve desired consistenc
  7. Fold in spinach leaves
  8. Serve on pasta or zucchini zoodles

Notes:

  1. This recipe freezes well. Divide into portions then freeze
  2. Serve with your favourite pasta. Try San Remo Pulse Pasta for GF
  3. Try serving with zucchini noodles for a very low calorie meal
  4. Delicious as a sauce with BBQ steak. Leave out a little of the milk to keep at sauce consistency
  5. Pairs well with chicken. Marinate chicken tenderloins in olive oil, garlic and picked thyme leaves. Cook on BBQ or in a pan and serve with Mushroom Sauce
  6. This recipe is delicious with or without the bacon. Leave bacon out for a low calorie option
  7. Delicious with 500gms cooked chopped chicken through it and served with pasta or rice
